Apple cake with crumble

Ingredients for 1 servings:

  • 300 g margarine
  • 300 g sugar
  • 650 g flour
  • 2 eggs
  • 1 pinch of salt
  • 1 tsp baking powder (heaped tsp)
  • 400 ml apple juice
  • 125 g apricot jam
  • 2 packets of pudding powder (vanilla)
  • 1 kg apples, diced
  • 2 tbsp breadcrumbs
  • 2 packets of vanilla sugar
  • 1 tsp cinnamon, ground
  • possibly grease for the tray

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

For the dough, knead 125g margarine, 125g sugar, eggs, salt, baking powder, and 350g flour. Roll out the dough onto a greased or lined baking sheet and sprinkle with breadcrumbs. Then, combine the apple juice with the apricot jam and custard powder and bring to a boil, stirring constantly, until a thick mixture forms. Remove the pan from the heat and add the diced apples. Heat everything up again, stirring vigorously, and then let cool slightly. Pour the mixture onto the dough. For the crumble, melt 175g margarine and knead it with 175g sugar, 300g flour, the vanilla sugar, and the cinnamon. Spread the crumble over the cake. Bake the cake in a preheated oven at 180°C to 200°C for approximately 30-35 minutes.
