Ingredients for 1 servings:

  • 200 g flour
  • 200 g sugar
  • 150 g almonds, ground
  • 1 tsp cinnamon
  • 500 g sweet cherries, pitted
  • 1 tsp margarine or butter
  • 6 eggs, separated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

an old cake recipe from Thuringia, from a springform pan, approx. 12 pieces

Whisk the sugar and egg yolks until fluffy. Combine the mixture with the almonds, sifted flour, and cinnamon. Carefully fold in the stiffly beaten egg whites, then fold in the pitted cherries. Pour the batter into a springform pan greased with margarine or butter and bake at medium heat for about 40 minutes until golden brown. This cake yields about 12 slices. In Blankenhain and Weimar, it is said that this cherry cake was Friedrich Schiller’s favorite.
