Meatballs in peanut sauce

Ingredients for 4 servings:

  • 500 g minced meat, mixed
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp sweet paprika powder
  • 3 tbsp soy sauce
  • 1 egg(s)
  • 3 tbsp flour
  • ½ tsp basil
  • 5 cloves garlic
  • 60 g peanuts, roasted, without salt or other spices
  • 2 tbsp curry paste, red
  • 250 ml coconut milk
  • 1 tbsp sugar
  • 2 tbsp fish sauce

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Mix the minced meat with salt, pepper, paprika, and basil. Add the egg, soy sauce, and flour, and knead well. Form small balls about 2 centimeters in diameter, roll in flour, and fry in oil until browned. Then set aside. For the sauce, peel and press the garlic. Grind the peanuts (of course, you can also use natural peanuts and roast them without fat first, then grind them). Heat 3 tablespoons of oil in a pan and gently fry the garlic. Add the red curry paste and continue to stir-fry for 2 minutes. Add the coconut milk and peanuts, and season with the fish sauce and sugar. Add the meatballs and slowly heat them through in the sauce. Saffron rice goes wonderfully with this.
