Glazed sweet potatoes for Thanksgiving

Ingredients for 4 servings:

  • 800 g sweet potatoes
  • Salt
  • Butter for the mold
  • 100 g brown sugar
  • 6 tbsp orange juice
  • 50 g butter

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Glazed Sweet Potatoes – from New England

Wash the sweet potatoes and cook them covered in lightly salted water over medium heat for about 10 minutes until just tender. Drain the potatoes, let them cool slightly, and peel them. Preheat the oven to 175°C (top and bottom heat). Grease a shallow baking dish with butter. Cut the sweet potatoes into 1-2 cm thick slices and arrange them in the prepared dish in a shingle pattern. Place the sugar and orange juice in a small saucepan and melt the sugar over low heat. Stir in the butter and let it melt. Drizzle this syrup over the potatoes and bake everything in the oven (center, gas mark 2, fan oven 160°C) for about 20 minutes.
