Bean sprouts and cucumber salad

Ingredients for 4 servings:

  • 6 tbsp vinegar
  • 4 tbsp soy sauce
  • 4 tsp sugar
  • ½ tsp salt
  • ½ tsp pepper
  • 4 tbsp oil
  • 250 g soy sprouts
  • 1 small red bell pepper(s)
  • 1 tbsp sesame seeds
  • 1 large cucumber(s)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine vinegar, soy sauce, sugar, salt, pepper, and oil in a bowl and thoroughly mix to form a marinade. Drain the soybeans. Wash the bell peppers and cut into small pieces. Just before serving, toss both with half of the marinade. Briefly toast the sesame seeds in hot oil. Wash the cucumber, cut into thin slices, and toss with the marinade, bell peppers, soybean sprouts, and sesame seeds just before serving.
