Rhenish leek salad

Ingredients for 6 servings:

  • 1 kg leek
  • 2 apples
  • 1 can pineapple, in pieces
  • 6 eggs
  • 1 jar Miracle Whip or similar salad cream
  • salt and pepper
  • Cayenne pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Cut the leek into thin strips and wash thoroughly. Cut the apples into small pieces. Boil the eggs and slice them. Drain the pineapple, reserving the juice, and mix with Miracle Whip. Combine all ingredients in a large bowl and mix, then season to taste. Let the salad marinate for at least 2 hours.
