Frankfurter Handkäs Salad

Ingredients for 4 servings:

  • 8 hand cheese
  • ½ apple
  • ½ bunch radishes
  • 2 spring onions
  • 1 handful of walnuts
  • 1 shallot(s) or small onion
  • 4 tbsp, heaped sauce (Frankfurter green sauce)
  • 2 tbsp vinegar
  • 2 tbsp oil
  • salt and pepper
  • e.g. cress or chives
  • 8 walnut halves for garnishing

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Cut the hand cheese into approximately 1 cm cubes, and thinly slice the apple, radishes, and spring onions. Finely dice the shallot and chop the walnuts. Mix the vinegar, oil, pepper, salt, and green sauce. Place all ingredients in a bowl, mix, and let stand for 1 hour. Serve on the plate, garnish with some cress and half a walnut. Serve with fresh country bread with butter and, of course, apple wine or beer.
