American mashed potatoes with blue cheese

Ingredients for 6 servings:

  • 1,150 g potatoes, peeled and cut into quarters
  • salt water
  • 1 medium-sized onion(s), chopped
  • 2 tbsp garlic, chopped
  • 2 tbsp butter
  • 60 ml dry white wine or chicken broth
  • 125 ml whipped cream, liquid
  • ½ tsp salt
  • ¼ tsp black pepper
  • 110 g blue cheese, crumbled
  • 2 stalks of spring onion(s), cut into rings, if desired

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Mashed potatoes with blue cheese

Bring the potatoes to a boil in salted water on the stovetop. Reduce the heat and cook the potatoes for 20 minutes until tender. In another saucepan, melt the butter and sauté the onion and garlic in the hot butter. They should be soft but not browned. Add the wine. Bring the mixture to a boil, then reduce the heat and simmer uncovered for 3-4 minutes. Remove the cooked potatoes from the heat and drain the water. Mash the potatoes with a potato masher. Add the wine mixture, salt, and pepper, and mix with the potatoes using a wooden spoon. Then pour in the heavy cream and mix everything well with the wooden spoon again. Add the blue cheese to the puree and mix well. Garnish with spring onion rings, if desired, and serve.
