Ingredients for 2 servings:
- 4 slices of bread (protein bread)
- 4 large eggs
- 50 ml milk
- 2 tbsp cream
- 1 small onion(s), finely chopped
- 1 tbsp chives, cut into rolls
- 1 tsp peppercorns, pink, dried, coarsely chopped
- 1 tsp peppercorns, green, dried, coarsely chopped
- 1 tsp butter
- 40 g cheese (Gruyère or mountain cheese), grated
- 1 handful of cress
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Whisk the eggs with the milk and cream, then fold in the pink and green peppercorns and chives. First, sauté the onions in the heated butter, then add the egg mixture. Allow to set, stirring occasionally. Remove the pan from the heat, sprinkle with the cheese, and cover to melt. Meanwhile, toast the egg white bread slices and place them on two plates. Spoon the scrambled eggs onto the bread slices and sprinkle with cress. If you like, serve with a salad, such as lamb’s lettuce.
