Sweet potato mash

Ingredients for 4 servings:

  • 1 kg sweet potatoes
  • 250 ml milk
  • 1 tbsp butter
  • 2 tbsp maple syrup
  • ½ tsp cinnamon
  • ½ lemon(s), the juice
  • Salt
  • pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Wash the sweet potatoes and lightly score the skin in a few places. Cook the potatoes in plenty of boiling water for about 30-40 minutes until tender. Then drain, let cool, and peel. Combine the milk, butter, and syrup in a saucepan and heat gently, but do not boil. Mash the potatoes and mash with the milk mixture until smooth. Stir in the lemon juice, if desired. Season the mash with salt and pepper.
