Ingredients for 8 servings:
- 400 g flour
- 3 tbsp milk, warm
- 250 ml water, warm
- 2 tsp dry yeast
- 1 tbsp sugar
- ½ tsp salt
- 1 egg(s)
- 1 tbsp butter, softened
- 1 egg(s)
- 1 tbsp water

Combine all ingredients except the flour in a mixing bowl and mix briefly. Then add the flour, and since I don’t have a Kitchen Aid, I mixed thoroughly with the dough attachment on my mixer. Let the dough rise in a warm place for 1-2 hours, until it has roughly doubled in size. Line a baking sheet with parchment paper. Divide the dough into 8 pieces. Carefully shape each piece into a ball with floured hands and place them 3-4cm apart on the baking sheet. Don’t knead in too much flour, or the rolls will become tough. Cover again with a towel and let rise for another 1-2 hours. The rolls should have almost doubled in size. I had two baking sheets and, due to lack of time, put them in the oven at 50 degrees Celsius (122 degrees Fahrenheit), and hey presto, the top ones on one of them were already much too big! And then there’s nothing more you can do. The rolls stick to the parchment paper, and if you touch them, the air literally goes out of them. No matter, I baked them that way, and they tasted good. The bottom tray was just right, though. Preheat the oven to 200°C. Fill an ovenproof dish with water and place it on the bottom of the oven. Mix the egg and water and brush the rolls with it, then bake for about 15 minutes, turning the tray once. When they are golden brown, remove from the oven and let cool.
