Serbian minced meat and vegetable rice

Ingredients for 3 servings:

  • 600 g minced meat, mixed
  • 1 large onion(s)
  • some oil
  • 2 red bell peppers
  • 1 large carrot(s)
  • 70 g tomato paste
  • 1 cup water
  • Salt
  • pepper
  • Paprika powder
  • 2 bags of rice
  • basil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Peel the onions and cut into small cubes. Wash and deseed the bell peppers, and cut into small cubes, approximately 1 cm x 1 cm. Peel the carrot, quarter them lengthwise, and then cut them into thin slices. Add the rice to the boiling water and cook for 20 minutes. Season the minced meat with salt, pepper, and paprika and fry it in a little oil in a pot. When the minced meat is cooked through and there is still some fat from the meat as broth, add the onions and fry for about 3-4 minutes. Add the diced bell pepper and fry for another 4-5 minutes. Add the carrot and fry for another 4-5 minutes. Add the tomato paste and water, mix well, and simmer until the rice is done. Drain the cooked rice, add it to the pot, mix well, and season with salt, pepper, paprika, and basil.
