Ingredients for 3 servings:
- 1 chicken, cut into 10 pieces
- 3 liters of water
- 4 tbsp salt
- 2 tbsp pepper
- 80 g flour
- 6 tbsp paprika powder
- 1 tsp chili powder
- 2 tsp garlic powder
- 3 tsp cayenne pepper
- ½ liter of oil

Working time approx. 30 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 30 minutes; Total time approx. 9 hours
Joe’s Fried Chicken (spicy)
Mix three tablespoons of salt with the water in a large bowl and add the chicken pieces. Cover the bowl and refrigerate for 8 hours. Rinse the meat under cold water and pat dry. Place 1 tablespoon of salt, pepper, flour, paprika, chili powder, garlic powder, and cayenne pepper in a sturdy freezer bag and shake to mix everything together. Place three chicken pieces into each bag, seal the bag tightly, and shake to coat the chicken pieces with the seasoning. Deep-fry the chicken pieces in the hot oil, skin-side down, for 6 minutes, then turn and fry for another 9 minutes.
