Thai pork loin with peanut sauce – Thai Pork with Peanut Sauce – from the slow cooker

Ingredients for 4 servings:

  • 1 kg pork loin(s) or tender pork back, trimmed and cut into 4 pieces
  • 2 red bell peppers, cut into strips
  • 150 ml sauce (teriyaki sauce or mix soy and ketjap manis 2:1)
  • 2 tsp rice vinegar or apple cider vinegar
  • 1 tsp chili flakes, mild or hot
  • 2 cloves garlic, peeled and finely diced or chopped
  • 4 tbsp peanut butter without chunks
  • 3 tbsp spring onions, cut into fine rings
  • 3 tbsp peanuts, roasted, chopped
  • 2 limes, cut into wedges (8 or 12)
  • 1 tsp oil, for the slow cooker

Working time approx. 15 minutes; Cooking/baking time approx. 8 hours; Total time approx. 8 hours 15 minutes

really quick with little preparation and very tasty, an American version, not original Thai, but really good

Rub the slow cooker with oil using a kitchen towel – it will be easier to clean this way. Add the meat, bell peppers, teriyaki sauce, vinegar, chili flakes, and garlic to the slow cooker, close the lid, and let it run on LOW for about 8 to 9 hours. The meat should then flake apart with a fork. Remove the meat and roughly chop it. Add the peanut butter to the liquid in the slow cooker, stir well to loosen it and mix it with the rest of the liquid. Return the meat to the pot and stir to coat it with the sauce. Serve and sprinkle with the peanuts and spring onions. Serve with the lime wedges. Best served with basmati or jasmine rice.
