Peanut meatballs with vegetables in curry sauce

Ingredients for 4 servings:

  • 500 g minced meat
  • 2 onions
  • 1 egg(s)
  • 100 g peanuts, salted
  • 1 cup of Brunch Indian Curry
  • n. B. Vegetables of your choice, e.g. pumpkin, mushrooms, carrots, snow peas, …
  • Garlic
  • Soy sauce
  • salt and pepper
  • Oil for frying
  • 500 ml water

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Finely chop the peanuts. Combine the ground meat, finely diced onions, egg, and chopped peanuts, and season with salt and pepper. Form the ground meat into small balls with wet hands. Brown the meatballs all over in a little oil. Deglaze with 500 ml of water and simmer over low heat for 15 minutes. Stir in the brunch, add the vegetables, and simmer for another 15 minutes. Serve with rice and soy sauce. Tastiest on the second day.
