Buttermilk Pancakes

Ingredients for 3 servings:

  • 230 g flour
  • 250 ml buttermilk
  • 1 egg(s)
  • 1 tsp, leveled baking soda
  • 1 tbsp oil
  • 1 pinch of salt

Buttermilk pancakes

Sift flour into a bowl, mix in the baking soda and salt. In a second bowl, whisk the egg, add the buttermilk, and the oil (preferably flavorless, e.g., safflower or sunflower oil) and mix well. Pour the liquid into the solid mixture and quickly mix with a fork. It’s okay if some small lumps remain. Heat about 1 tablespoon of oil in a pan and drop small amounts of batter (a good tablespoon) into the hot oil and fry until golden brown on both sides. This makes about 15 small (4-5 cm diameter) pancakes.
