Whisk all ingredients in a mixing bowl with an electric hand mixer. Let the batter rise for 5-10 minutes. Finally, cook the pancakes (e.g., in a non-stick blini pan). Turn the pancakes in the pan when the bubbles in the batter begin to rise to the surface. The specified amount of batter is enough for approximately 28 small pancakes (7.5 cm in diameter). The flour and milk quantities correspond to a full coffee mug each. Tip: They taste great with a bit of cream cheese and two small strips of smoked salmon – they’re perfect as appetizers!
