Ingredients for 2 servings:
- 200 g mushrooms (curly hen)
- 50 g flour
- 50 ml white wine
- 1 egg white
- 1 tsp oil
- salt and pepper
- Fat for frying

Fat hen, wild mushroom dish
Cut the curly hen mushrooms into 1 to 2 cm thick slices, wash thoroughly, and drain on kitchen paper. Mix the flour with egg whites, wine, salt, and pepper to form a batter. Stir in a little oil. Dip the mushroom slices into the batter, fry in hot oil until golden brown, and drain on kitchen paper. Serve with green salad, onion rings, and vinaigrette.
