Wild garlic soup

Ingredients for 4 servings:

  • 40 g wild garlic, fresh
  • 4 large potatoes
  • 1,000 ml vegetable broth
  • 1 dash of cream or cremefine
  • some pepper
  • n. B. water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the potatoes and cut into chunks. Heat a little oil in a saucepan. Briefly sauté the potatoes and then deglaze with the stock. Finely chop the washed wild garlic. Set aside about two tablespoons. Add the rest to the potatoes. Let everything simmer for about 20 minutes. Once the potatoes are tender, puree everything into a creamy soup. Add a dash of cream and pepper. Add a little more water for your desired consistency. Stir in the rest of the chopped wild garlic and serve.
