Ingredients for 1 servings:
- 115 g margarine (half-fat margarine)
- 75 g sugar
- 2 eggs
- 75 ml milk, 1.5%
- 200 g flour
- ½ pack of cream of tartar baking powder
- 1 tbsp cocoa powder
- 4 large bananas
- 2 tbsp raisins (rum raisins)
- 600 g yogurt, 1.5%
- 2 cups cream cheese, 1% or 5%
- 2 tbsp lemon juice
- 1 packet of vanilla sugar (bourbon vanilla)
- Sweetener, liquid to taste
- 2 sachets of gelatin powder
- 10 tbsp water

Banana cake light, my version for enjoyment without regrets
Beat the margarine and sugar until fluffy. Gradually stir in the eggs and milk. Mix the flour, baking powder, and cocoa powder and sift over the dough. Stir to a smooth batter and spread it onto a baking sheet lined with baking paper (approx. 30 x 40 cm). It doesn’t have to be exact; you’ll cut it later. Preheat the oven to 180°C (gas mark 2, fan oven 160°C) and bake the batter on the middle shelf for 25-30 minutes. Place the gelatine and water in a large cup, stir, and let it swell. Mix the yogurt, cream cheese, lemon juice, vanilla sugar, and liquid sweetener to taste until smooth. Dissolve the swollen gelatine in the microwave on low power (do not heat it!) and let it cool. Use a cake ring to cut a round disc out of the baked base and place it on a cake plate using the ring. Halve the peeled bananas and arrange 2 banana halves (4 halves) on the base. Scatter 1 tablespoon of rum raisins between the layers. Stir the cooled gelatin, until lukewarm, into the yogurt and cream cheese mixture and spread half of the cream over the bananas. Spread the remaining 2 chopped bananas and the diced half of the cake slice scraps on top. Scatter 1 tablespoon of rum raisins between the layers. Then spread the rest of the cream on top. Crumble the remaining cake scraps over the top using a very coarse grater and spread evenly. Now let the cake set in the refrigerator, ideally overnight. It will set beautifully, be firm to slice, and usually go faster than you can blink.
