Sauce for my recipe for spicy chicken skewers
Heat the oil in a karhai or heavy-based pan over low heat. Open the cardamom pods and remove the seeds. Add the onions and cardamom to the hot oil and fry until the onions are translucent. Add the garlic and fry for 1 minute, then add the tomatoes and simmer until a thick paste forms. Add the cinnamon, garam masala, chili, and sugar to the sauce and cook for 1 minute. Stir in the cream and almonds. Add the cooked chicken skewers to the sauce and heat everything over medium heat for 4 minutes. Serve sprinkled with coriander.
