Ingredients for 4 servings:
- 300 g rice
- 3 tomatoes
- 1 zucchini
- 3 tbsp olive oil
- 400 g minced meat, half and half
- 100 g sheep’s cheese
- 500 ml milk
- 6 eggs
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
with tomatoes, zucchini and minced meat
Cook the rice as usual. Wash, trim, and dice the tomatoes and zucchini. Dice the feta cheese. Whisk together the milk and eggs and season with salt and pepper. Heat the olive oil, brown the minced meat, and season with salt and pepper. Place the rice, zucchini, tomatoes, and minced meat in a baking dish and mix well. Pour the egg wash evenly over the top and spread the feta cheese on top. Bake the casserole in an oven preheated to 180°C for about 60 minutes.
