Lemon Cream Cheese Cookies

Ingredients for 1 servings:

  • 300 g flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 300 g sugar
  • 75 g sugar, for rolling the cookies
  • 80 g cream cheese
  • 1 large lemon(s), untreated, grated zest
  • 100 g butter, melted
  • 50 ml oil, neutral
  • 1 egg(s)
  • 1 tbsp lemon juice
  • 1 tbsp milk
  • 1 tbsp vanilla extract
  • 1 tbsp flavoring (lemon extract)

Working time approx. 15 minutes; Cooking/baking time approx. 13 minutes; Total time approx. 28 minutes

Typical American cookies

Preheat oven to 175°C. Mix flour, baking powder, and salt in a bowl and set aside. Combine 300g of sugar and lemon zest, then add the cream cheese and melted butter. Mix everything again until the dough is fairly smooth. Add the oil and mix again. Add the egg, lemon juice, milk, vanilla extract, and lemon extract and mix well. Mix with the flour mixture until the dough is nice and smooth again. Form small balls from the dough, then roll them in the remaining sugar and place them on a baking sheet. Bake for 11-13 minutes. Remove from the oven and let cool on the baking sheet for a few minutes to set. Then remove from the oven and place on a wire rack to cool completely.
