Southern-style pasta sauce

Ingredients for 4 servings:

  • 1 can of tomatoes, peeled (drained weight 480 g), diced if desired
  • 200 g smoked bacon, diced
  • 2 cloves garlic, diced
  • 2 tbsp ketchup (chili ketchup)
  • 1 small chili pepper(s), diced
  • sugar, brown
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Fry the bacon over low heat until crispy. Drain and dice the tomatoes. Remove the bacon from the fat and set aside on a kitchen towel. Add the garlic to the fat and let it soften. Add the tomatoes, chili ketchup, chili pepper, sugar, salt, and pepper to the pan with the garlic and bring to a boil. Heat the bacon cubes in the sauce. Season with salt and sugar. This dish goes particularly well with tubular pasta such as penne.
