Ingredients for 4 servings:

  • 1 egg(s)
  • 1 tsp garlic, crushed
  • 2 tsp lemon juice, freshly squeezed
  • 1 tsp fresh parsley, chopped
  • 2 tsp spring onion(s), sliced
  • 1 cup olive oil
  • ¼ tsp cayenne pepper
  • 1 tsp mustard, grainy
  • Salt

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

For lovers of New Orleans cuisine

Puree the egg, garlic, lemon juice, parsley, and green onions in a food processor or with an immersion blender for about 15 seconds. Then slowly but steadily add the olive oil. Mix in the cayenne pepper and mustard well, and season with salt. Cover and let the sauce rest in the refrigerator for 1 hour. Consume within 24 hours. This sauce goes perfectly with fish, shrimp, and pan-fried meats. I also like to spread it on my baguette.
