Ingredients for 1 servings:
- 1 cup cookie(s) (vanilla cookies), crumbled
- 60 g flour
- 4 tbsp butter, cold
- 250 g cream cheese
- 115 g sugar
- 2 eggs
- 2 tbsp flour
- 1 tbsp lemon peel, grated
- 3 tbsp lemon juice
- ¼ tsp baking powder
- 1 cup strawberries, chopped
- some lemon zest, grated, for garnishing
- Fat, for the shape
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour
Preheat oven to 175°C. Grease a square baking pan (20x20cm) thoroughly. In a bowl, mix the crushed biscuits with the flour, then with the butter, until crumbly. Line the bottom of the baking pan with this mixture and bake for 10 minutes. Meanwhile, beat the cream cheese with the sugar until creamy. Then gradually add the eggs. Mix in the flour, grated lemon zest, lemon juice, and baking powder. Carefully fold in the strawberries. Pour over the still-warm cake base and bake for another 25-30 minutes.
