Ingredients for 1 servings:
- 280 g sugar
- 40 g beet syrup
- 200 g margarine or butter
- 2 eggs
- 400 g flour
- 1 tsp baking soda
- ½ packet of vanilla sugar
- 300 g dark chocolate
- ½ tsp salt

Mix the sugar and syrup first with a mixer and then with your fingers until there are no lumps. Stir in the softened margarine. Add the eggs and mix everything well. In a second bowl, mix the flour, baking soda, vanilla sugar and salt. Add to the sugar mixture and mix briefly. Don’t mix for too long, or the cookies will become tough. Cut the chocolate into small pieces and fold into the batter. Place the batter in an airtight container in the refrigerator for 24 hours. This will give the cookies more bite. Preheat oven to 160°C. Line a baking tray with baking paper, scoop out the dough with a teaspoon and form small balls. Place them on the baking tray 8 cm apart, as the dough will rise a lot. Bake on the middle rack for 15 minutes and let cool on the baking tray.
