Ingredients for 1 servings:

  • 300 g flour
  • 60 g powdered sugar
  • 225 g butter, soft
  • 4 large eggs
  • 300 g sugar
  • 150 ml lemon juice, freshly squeezed
  • ½ pack of lemon peel
  • 3 tbsp powdered sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

American lemon slices, for 24 pieces

Preheat oven to 175°C. Set aside 7 tablespoons of flour, then mix the remaining flour with the powdered sugar and butter to form a dough. Press the dough into a deep rectangular baking pan or casserole dish (approx. 22 x 32 cm). Bake in the preheated oven for 15-20 minutes until light golden brown. Meanwhile, for the topping, mix the eggs, sugar, remaining flour, lemon juice and lemon zest with a hand mixer or immersion blender for at least 1 minute. Pour the mixture onto the prebaked base and return to the oven for another 20 minutes, until the top is firm. Allow the cake to cool. The slices will set as they cool. Dust with powdered sugar and cut into squares.
