Brownies with cherries and cream cheese frosting
Grease a baking pan measuring approximately 25 x 15 or 20 x 20 cm and chill. Select a few of the drained cherries for garnishing. Preheat the oven to 190°C (top/bottom heat). For the batter, melt the chocolate in a double boiler, stirring constantly. Stir in the butter, remove the mixture from the heat, and chill. Beat the eggs with a pinch of salt until frothy, then gradually add the sugar and continue beating until the mixture is thick and creamy. Mix the cocoa with the flour and baking powder, then stir into the egg custard along with the chocolate mixture, kirsch, and cherry juice. Pour the mixture into the prepared pan, scatter the cherries on top, and press them in slightly if necessary. Bake in the preheated oven for about 25-30 minutes. As always, the brownies should still be moist inside when they come out of the oven! Then let it cool thoroughly. For the topping, beat the cream cheese and powdered sugar until creamy. Whip the cream until stiff peaks form and fold in. Chill. Once the brownies have cooled, remove them from the pan and place them on a cake plate (if you turn them out, please place them on the plate so the cherries are facing up!). Spread the cream cheese and whipped cream mixture on top, arrange the reserved cherries on top, and sprinkle everything with chocolate shavings.
