Zucchini-walnut bread

Ingredients for 1 servings:

  • 500 g wheat flour or spelt flour
  • 1 pinch of salt
  • 140 g butter, soft
  • 1 packet of baking powder
  • 1 tsp. baking soda
  • 2 eggs
  • 500 g zucchini, grated
  • 125 ml milk
  • 1 tbsp beet syrup, can also be omitted
  • 180 g walnuts, chopped

Working time approx. 20 minutes; Total time approx. 20 minutes

I discovered this bread during a vacation in the USA. It’s delicious! Mix sugar, butter, sugar beet syrup, and eggs until smooth. Add the grated zucchini. Combine the salt, flour, baking powder, and baking soda and add to the mixture. Mix with the milk until smooth. Finally, fold in the walnuts. Bake in the oven at 180°C (convection oven) for about 50 minutes. Depending on your oven, the temperature should be reduced after about 25 minutes.
