Ingredients for 30 servings:

  • 2 packets of yeast (dry yeast)
  • 375 ml milk
  • 150 g butter
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 1 tsp salt
  • ½ tsp nutmeg
  • 3 eggs
  • 750 g flour
  • 200 g raisins
  • 2 tsp water
  • 1 egg(s), including the yolk
  • 200 g powdered sugar
  • 4 tsp milk
  • 1 pinch(s) of vanilla sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Hot Cross Buns

Dissolve the dried yeast in the warm milk in a large bowl. Add the sugar, butter, vanilla, nutmeg, salt, and half of the flour; mix well until smooth. Then add the eggs and dried fruit, followed by the remaining flour. Knead well on a work surface. If the dough is still sticky, add more flour. Cover the dough and let it rise in a warm place for at least an hour. Knead the dough again and form about 30 balls. Let it rise on a greased baking sheet for about 30 minutes. Cut a cross into the surface of each with a sharp knife. Whisk the egg yolk and water together and brush the rolls with it. Bake at 190 degrees Celsius for about 12 to 15 minutes. Mix the ingredients for the icing and let it drizzle onto the cooled rolls, ideally along the cross lines.
