Banana Walnut Muffins

Ingredients for 1 servings:

  • 330 g flour
  • 1 tsp baking powder
  • 1 pinch of nutmeg
  • 1 pinch of clove powder
  • 140 g butter, soft
  • 125 g sugar
  • 2 eggs
  • 3 bananas
  • 75 g walnuts
  • possibly chocolate for icing

Preheat the oven to 190 degrees Celsius (375 degrees Fahrenheit). Line a muffin tin with 12 paper muffin cups. Combine the flour, baking powder, and spices. Cream the softened butter with the sugar until fluffy, then beat in the eggs thoroughly. Mash the bananas with a fork and roughly chop the walnuts. Stir the flour mixture into the foam mixture with a spatula. Then stir in the banana puree and add the walnuts. Stir everything briefly. Pour the batter into the muffin cups and bake at 190 degrees Celsius (375 degrees Fahrenheit) for about 20 minutes on the middle rack. Do the skewer test; if nothing sticks, the muffins are done. If desired, you can drizzle with chocolate icing.
