Fried noodles with chicken in pineapple and coconut sauce

Ingredients for 2 servings:

  • 400 g chicken breast fillet(s)
  • 100 g Chinese egg noodles
  • 400 ml coconut milk
  • 1 small can of pineapple (pieces)
  • 1 red bell pepper(s), diced
  • Sambal Oelek
  • 3 tbsp desiccated coconut
  • curry powder
  • 2 tbsp oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Own creation

Cook the noodles and drain well. Cut the meat into pieces and stir-fry in a wok. Add the noodles and stir-fry briefly. Then add the bell pepper pieces and stir-fry briefly. Add the pineapple, coconut milk, and desiccated coconut. Season with sambal, curry, salt, and pepper, and simmer for about 5 minutes.
