Ingredients for 12 servings:
- 3 m.-sized eggs
- 125 g margarine or butter
- 60 g sugar
- 200 g wheat flour
- 2 pinches of salt
- 1 tsp turmeric powder
- 20 g baking powder
- 60 g orange juice
- 40 g cashew nuts, roasted with honey
- 40 g carrot(s), grated
- 60 g broccoli florets
- 30 g pepper, red
- 1 m.-sized onion(s)
- 2 m.-sized garlic cloves, fresh
- 2 tbsp celery leaves, fresh or frozen
- 2 small chili peppers, green
- 1 tsp instant chicken broth
- 1 tsp, levelled black pepper from the mill
- 1 pinch of mace or nutmeg, freshly grated
- 1 pinch of coriander powder
- 1 tbsp sugar
- 4 tbsp oil
- 1 tbsp, heaped flour
- n. B. Salt and pepper, black to taste

Instructions

Spicy Javanese-style broccoli tart. Recipe from Java, Indonesia, for a 24 cm springform pan
All ingredients should be at room temperature. Prepare the filling ingredients first, then cut them into hazelnut-sized pieces. Grate the carrot, chop the nuts slightly smaller, deseed the chilies, and slice them crosswise into fine rings. Split the peppers lengthwise, deseed them, and slice them crosswise into approximately 1 cm long pieces. Roast the onion in cooking oil until light brown. Mix all the chopped ingredients, from cashews to chilies, thoroughly; season, add sugar, and flour to taste. Preheat the oven to 170°C (top/bottom heat). Moisten a springform pan and line it with baking paper. Place the margarine and sugar in a mixing bowl and beat with the whisk of a food processor at medium speed until the sugar is dissolved and the mixture has a lighter color. Add the eggs, one at a time, and beat for another 4 minutes. Combine the flour, a pinch of salt, the baking powder, and the turmeric powder, and add them in portions along with the orange juice. This should take about 4 minutes. Gently fold in the filling by hand using a spatula. Don’t overmix! Pour into the springform pan and smooth it out with a spatula. Place the pan on the middle rack of the oven and bake the tart for about 35 minutes. The tart tastes best served warm.
