Ingredients for 1 servings:
- 475 g flour
- ½ pack of baking powder
- 1 pinch of salt
- ½ tsp cinnamon
- ½ tsp lemon zest
- ½ tsp vanilla extract
- 250 g quark
- 80 ml milk
- 70 ml rapeseed oil
- 125 g cane sugar, light
- Raisins or chocolate drops
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Mix the quark, milk, sugar, oil, lemon zest, cinnamon, and vanilla. Mix the flour with the baking powder and salt and knead briefly to form a smooth dough. Divide the dough into two pieces and roll each out on a floured surface. Use a gingerbread man cookie cutter to cut out large gingerbread men. The small gingerbread men can be cut out using a gingerbread man cutter. Decorate the eyes, mouth, and button band with either raisins or chocolate drops and carefully place them on a baking tray. Bake in the oven at 200°C (top/bottom heat) for 15 minutes until lightly browned. They really shouldn’t be too brown, otherwise they will become dry! They taste best fresh, but can also be frozen and thawed as needed.
