Ingredients for 1 servings:
- 3 banana(s), ripe
- 60 g coconut flour
- 30 g almond flour
- 4 eggs
- 2 tbsp honey
- 2 tbsp coconut oil
- 2 tsp cinnamon
- 1 tsp cream of tartar baking powder
- 5 tbsp coconut milk
- 40 g sunflower seeds, alternatively walnuts
- 1 tbsp maple syrup
- 1 tsp cinnamon
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes
Banana bread, gluten-free, lactose-free, low-carb
Beat the eggs with honey and coconut oil. Mix the dry ingredients together. Add the egg mixture to the dry ingredients and stir in. Mash the bananas with a fork. Add the coconut milk and stir this mixture into the remaining ingredients. Combine the sunflower seeds with the maple syrup and cinnamon. Grease a loaf pan thoroughly and pour in the batter. Sprinkle with the seeds and bake in the oven at 180°C (top/bottom heat) for about 30-40 minutes. Delicious hot or cold, fresh from the oven and even a few days later if stored in the refrigerator.
