Sauerkraut with apple and pork belly

Ingredients for 4 servings:

  • 1 tbsp crackling lard
  • 1 m.-sized onion(s)
  • 1 apple
  • 1 gr. can/n sauerkraut
  • 3 juniper berries
  • 1 bay leaf
  • ½ tsp caraway seeds
  • 250 ml apple juice
  • 250 ml meat broth
  • 500 g smoked pork belly
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 10 minutes

Peel and finely chop the onion. Peel and core the apple, and cut it into small cubes. Heat the lard in a saucepan and fry the diced onion and apple until golden brown. Add the sauerkraut with the juice from the can, the apple juice, the broth, juniper berries, bay leaf, and caraway seeds. Season with salt and pepper. Add the meat. Reduce the heat and simmer gently with the lid on for two hours.
