Ingredients for 4 servings:

  • 1 liter of milk
  • 6 cardamom pods, green, crushed
  • 1 tsp, leveled cinnamon powder
  • 1 tsp. clove powder
  • 1 pinch of allspice powder
  • 100 g sugar
  • 300 g yogurt, at least 3.5% fat

Instructions

Working time approx. 10 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 10 minutes

Indian spiced milk ice cream

Combine the milk, sugar, and spices in a saucepan. Bring to a boil while stirring, then reduce the heat to low and simmer for about 1 hour. Whisk frequently to prevent the milk from sticking to the bottom of the pan. Pour through a fine sieve and let cool. Whisk in the yogurt (I prefer Greek yogurt with about 10% fat). The mixture should have a creamy consistency. Pour the mixture into molds and freeze overnight. Remove the ice cream from the freezer about 10 minutes before serving, turn it out onto a plate, and serve with an exotic fruit salad or a mango glaze.
