Old Saxon potato salad

Ingredients for 4 servings:

  • 1 kg potatoes, waxy
  • 100 g bacon, streaky, finely diced
  • 1 large onion(s), finely diced
  • 2 tbsp oil
  • 2 gherkins, finely diced
  • 4 tbsp parsley, finely chopped
  • 2 tbsp cucumber juice
  • Salt
  • Pepper, white
  • 1 tsp sugar
  • 2 eggs, hard-boiled, roughly chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Wash the potatoes, bring them to a boil in salted water, and simmer for about 30 minutes. Meanwhile, fry the bacon and diced onion in oil. Place the bacon and onion in a large bowl with all the other ingredients and mix well. Drain the potatoes, let them cool slightly, and peel them while still hot. Slice them and add them to the bowl with the other ingredients. Mix well again and season with sugar. Portion the potato salad and top with the hard-boiled eggs.
