Peanut butter ramen

Ingredients for 2 servings:

  • 4 bags of ramen noodles (Asian instant noodles)
  • 4 tbsp peanut butter, crunchy
  • 1 piece(s) ginger, fresh
  • 1 tsp cayenne pepper
  • 2 tbsp sesame seeds
  • 1 tbsp olive oil
  • ½ lime(s)
  • 2 spring onions
  • 1 bunch of coriander leaves
  • 1 garlic clove(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Half fast food, half freshly cooked – but definitely extremely tasty

While still in the packaging, break the ramen noodles in half about once or twice. Then tear open the package and place the noodles in a deep plate. Open the sachets of seasoning and oil and set aside for later. Measure half the amount of water specified on the ramen package using a measuring cup and quadruple it. Wash the spring onion and slice into thin rings. Wash the cilantro, dry it a little, pick off the leaves, and set aside. Peel and finely chop the garlic. Peel and chop about the same amount of ginger. Heat a little olive oil in a medium-sized saucepan. Sauté the garlic and ginger until toasted (be careful, this happens very quickly). Then deglaze with the water, add the ramen, and break it up a little with a wooden spoon if necessary. Let the noodles simmer over low heat until soft. Now add the reserved seasoning, oil, and peanut butter and stir everything thoroughly. Then season with cayenne pepper, add the sesame seeds, and squeeze in the lime juice. Stir everything together again. Serve the finished dish on deep plates and garnish with plenty of coriander and spring onions.
