Udon noodles peanut style

Ingredients for 1 servings:

  • 200 g Udon noodles, pre-cooked
  • 2 tbsp peanut oil
  • 2 spring onions
  • 2 tbsp soy sauce
  • 1 tbsp, heaped peanut butter, creamy
  • 1 tsp sugar
  • 1 tsp chili flakes or chili powder

Working time approx. 7 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 12 minutes

Asian, vegetarian, fast

Finely slice the spring onions and sauté them in the peanut oil in a saucepan over medium heat. Now reduce the heat. Heat the udon noodles and hot water in a saucepan (approx. 2 minutes). Before draining, add 4 tablespoons (for a recipe for 1 person) of the pasta water to the pan with the spring onions. Add the remaining ingredients and stir over low heat to form a marinade. Be careful not to overdry the marinade. Mix the drained udon noodles with the marinade thoroughly. If you like, you can also slice some spring onions over the top.
