Ingredients for 1 servings:
- 3 eggs
- 60 g sugar
- 75 g flour
- 20 g pudding powder, vanilla flavor
- 125 ml milk (1.5%),
- 1 pkt. Cake glaze, red
- 500 g cream cheese (Exquisa 10.2%),
- 1 pkt. Ready-made Quarkfine Strawberry mix
- 2 pts. gelatin, ground
- 200 g strawberries
- some lemon juice
- some sweetener (liquid sweetener)
- 1 pkt. Ready-made mix for whipped cream
Instructions
Working time approx. 40 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 40 minutes
Preheat oven to 200°C. Beat the eggs and sugar with a hand blender on high for about 8 minutes. Sift in the flour and pudding mix and fold in. Pour the batter into a springform pan and bake at 180°C for about 20 minutes. Let the cake base cool. Prepare the gelatin and whipped cream according to the package instructions, add the Exquisa and Quarkfein, and season with liquid sweetener if desired. Then stir in the dissolved gelatin. Wash and quarter the strawberries, halving all but a few. Spread half of the cream on the cake base and arrange the quartered strawberries on top. Spoon the remaining cream on top and smooth it down, then garnish with the halved strawberries. Prepare the glaze with a little lemon juice and liquid sweetener and pour it over the strawberries. Refrigerate the cake for at least 2 hours.
