Ingredients for 1 servings:

  • 80 g butter
  • 2 tbsp oil
  • 80 g sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 150 g flour
  • 1 tsp baking powder
  • 1 jar sour cherries
  • 200 g quark (low-fat quark)
  • 100 g cream
  • 3 egg yolks
  • 100 g sugar
  • ½ pack of pudding powder (vanilla)
  • 3 egg whites
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cherries, that’s the kick

Prepare the batter by creaming the butter, oil, sugar, vanilla sugar, and eggs until fluffy. Then add the flour and baking powder and mix to form a batter. Grease a 26 cm springform pan and pour in the batter. Drain the sour cherries well and spread them on the batter. Pre-bake at 160-180 degrees (convection oven). In the meantime, mix the cream with the low-fat quark, egg yolk, sugar, and vanilla pudding powder. Finally, lightly mix in the stiffly beaten egg whites. Spread the quark topping on the pre-baked cake and bake for another 30 minutes. Let it cool briefly in the pan and serve once chilled.
