Ingredients for 2 servings:
- 160 g papaya
- 80 g yogurt
- 100 g whole milk
- 60 g creamy coconut milk (24% fat)
- 3 tbsp orange syrup, light Balinese
- 1 tsp vanilla extract
- 1 pinch of salt
- 3 tbsp lemon juice
- 200 g creamy coconut milk (24% fat)
- 2 tbsp sugar
- 1 pinch of salt
- 2 tsp agar-agar
- 6 ice cubes
- 2 slices of papaya
- n. B. Paprika powder, sweet
- n. B. flowers and leaves
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
A refreshing Indian drink prepared Balinese style. Served cold on hot days.
For the coconut cubes, heat the coconut milk with the ingredients while stirring. Simmer for one minute and then pour into a shallow dish. Let cool in the refrigerator. Once the mixture has set, cut into small cubes. Freeze any unused cubes in portions. For the fresh lemon juice, wash a lemon and cut a piece lengthwise to the right and left of the stem. Remove the seeds and squeeze the juice by hand. Discard the empty parts and the middle part (which contains bitter substances). Wash a papaya, cut off a sufficiently large piece, peel it, remove the seeds, and cut it into small pieces. Place all the ingredients for the lassi in a blender and blend at full speed for 30 seconds until smooth. Pour into sufficiently large glasses, garnish with papaya slices, coconut milk cubes, bell peppers, and flowers, and serve with a straw and a long ice cream scoop.
