Warm bacon salad

Ingredients for 8 servings:

  • 1,500 g potatoes
  • 250 g cucumber(s) (cucumber sticks, alternatively pickled gherkins)
  • 250 g bacon, streaky
  • 2 apples
  • 1 onion(s)
  • 3 tbsp cucumber juice
  • salt and pepper
  • Sugar

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Peel and boil the potatoes unpeeled until tender, then let them cool and peel them (jacket potatoes). Cut the boiled and peeled potatoes into slices of any thickness. Briefly fry the bacon in a pan and add to the potatoes. Peel, core, and dice the apples. Dice the onion and cucumber sticks and add them to the potatoes along with the chopped apples. Carefully toss the salad and season with the cucumber juice, salt, pepper, and sugar, if desired. Let the salad stand, covered, for about 1 hour and then warm in the oven before serving.
