Ingredients for 4 servings:

  • 300 g Chinese egg noodles
  • 200 g sprouts (soybean sprouts)
  • 2 spring onions
  • 3 cloves garlic
  • 50 g ham, raw
  • 3 tbsp oil (peanut oil)
  • 2 tbsp fish sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sugar, brown

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the noodles according to the package instructions. Drain, rinse with cold water, and drain thoroughly. Wash the bean sprouts. Trim the spring onions, cut them lengthwise, wash them, and cut them into approximately 3 cm long pieces. Peel and finely chop the garlic. Cut the ham into small cubes. Heat the oil in a pan (or a wok is better). Fry the garlic and ham over medium heat for 1 minute. Add the noodles, mix well, and fry for another 1 minute. Add the bean sprouts, spring onions, fish sauce, oyster sauce, and sugar, mix everything thoroughly, and cook until the ingredients are hot. The bean sprouts should still be crunchy. Serve immediately.
