Our delicious veal fricassee

Ingredients for 4 servings:

  • 500 g veal
  • 2 small onions, in rings
  • 250 g mushrooms
  • 1 cup broth, thin
  • Butter and flour
  • ½ cup sweet cream
  • ½ cup milk
  • 3 tbsp sour cream

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sauté the onions in a little butter without browning. Dice the meat, dust with a little flour, and fry over low heat without browning. Pour in the stock and simmer over low heat with the onions for about 20 minutes. Meanwhile, blanch the mushrooms and sauté in a little butter. Pour the meat into a sieve (collect the liquid), let it cool, and carefully remove the onions. Melt 2 tablespoons of butter in a saucepan and add a heaped tablespoon of flour to brown without browning. Top up with the meat juices, add the cream, milk, and sour cream, and simmer gently for 5 minutes. Add the meat and mushrooms. Serve with rice.
