Ingredients for 4 servings:
- 500 g flour
- 1 cube of yeast
- 250 ml water, lukewarm
- ½ tsp sugar
- 1 tsp salt
- 80 g butter
- 1 egg yolk
- 1 ¼ kg onion(s)
- 200 g bacon (smoked bacon)
- 1 cup sour cream
- 1 cup sour cream
- 5 eggs
- salt and pepper
- nutmeg and caraway

Classic and delicious
Put the flour in a bowl and make a well in the center. Dissolve the yeast in some of the lukewarm water and add it to the well with the sugar. Cover the liquid with a little flour, cover, and let rise in a warm place for 15 minutes. In the meantime, slice or dice the onions and dice the bacon. Briefly mix the pre-dough with the remaining water, flour, egg yolk, and salt. Melt the butter, let it cool, and mix it into the dough. Knead well until a smooth ball of dough forms. Dust the ball with flour and let rise for 15 minutes. Slowly fry the bacon in a large pot, fry until crispy, and remove from the pan. Sauté the onions in the bacon fat until translucent. Stir in 2/3 of the bacon cubes, season with salt, and pepper. Roll out the ball of dough on a greased or parchment-lined baking sheet and pull up a 2-cm-high edge all around. Pierce many small holes in the dough with a fork, cover, and let rise for 10 minutes. Whisk together the sour cream, sour cream, and eggs and season well. Spread the topping over the dough and pour the glaze over it, being careful not to spill over. Garnish with the remaining bacon cubes. Bake in a preheated oven at 200°C (400°F) for 45 minutes.
