Green Thai curry

Ingredients for 2 servings:

  • 200 g meat, shredded (chicken, turkey, beef or pork)
  • 1 tbsp oil (sesame oil)
  • 300 g vegetables, Asian mix (frozen or fresh)
  • 2 tbsp curry paste, green
  • some basil leaves (Thai)
  • 1 pinch of salt
  • 250 ml coconut milk

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

First, sear the meat in sesame oil in a wok (or a good frying pan with slightly higher sides). Then add the Asian vegetable mix and sauté for a few minutes, stirring frequently. Then stir in the curry paste, season with salt, and pour in the coconut milk. Simmer gently for another 10 minutes, until the vegetables are slightly softened but still crunchy. Finally, roughly tear the Thai basil leaves and add them. Serve with basmati rice.
