Spicy wild garlic muffins

Ingredients for 12 servings:

  • 200 g cheese (Emmental)
  • 250 g flour (wholemeal flour)
  • 100 g almond(s), ground
  • 50 g cornstarch
  • 1 tsp yeast (dry yeast)
  • 200 g butter, soft
  • ½ tsp salt
  • ½ tsp paprika granules
  • Nutmeg, freshly grated
  • 2 large eggs
  • 200 ml milk
  • 150 g wild garlic

Working time approx. 20 minutes; Total time approx. 20 minutes

quick and easy

Preheat oven to 180°C (160°C fan-assisted oven). Grate the cheese and mix with the flour, almonds, starch, and dried yeast. Cream the butter, salt, paprika flakes, and nutmeg until fluffy. First add the flour mixture, then the milk, and mix everything into a smooth batter. Rinse the wild garlic and pat dry, trim the longer stalks, finely chop the leaves, and lightly fold them into the batter. Grease the muffin tins or use paper cups and fill them with the batter. Bake in the preheated oven (bottom rack) for about 15 minutes. Do the skewer test! You’ll make about 12 muffins.
